Double Bean Beef Chili

This is one of my absolute favorites!

  • 1 Small Onion, Diced and Sautéed
  • 1 LB Grass Fed Beef
  • 1 Can Organic Diced Tomatoes (For more kick use Fire Roasted Tomatoes and Green Chiles)
  • 1 Can Organic Tomato Sauce
  • 2 Cans Organic Kidney Beans
  • 1 Can Organic Black Beans
  • 2-3 Cups of Beef Broth 
  • 2 1/2 TBSP Chili Powder
  • 3 TBSP Cumin
  • Salt, Pepper, Cajun Seasoning, Minced Garlic With Feeling
  • 2 TBSP Grass Fed Butter


  1. Sautee onion in grass fed butter and minced garlic.
  2. Brown beef, adding in 1/2 tbsp of chili powder, salt, and pepper or Cajun seasoning.
  3. Add all ingredients to a large pot and simmer until beans are soft. (I prepare in the morning and leave in the slow cooker all day).

So easy to make and take!

  • Two Large Chicken Breasts Cooked Any Way You Like. (Grilled is okay, but i prefer boiled.)
  • 1-2 Green Apples
  • 2 Cups Chopped Walnuts and/or Pecans
  • 1 Tbsp Minced Garlic
  • Salt and Pepper to Taste
  • 1 Tbsp Organic Maple Syrup (Can do without if cutting sugar)
  • Chosen Mayo to Desired Consistency (I use approximately 1-2 - 3/4 cup).


Mix all ingredients, chill, and enjoy! You can put it in romaine or a "wrap" or scoop with Simple Mills almond flour crackers.

I like to just shove this into mason jars to make it a super convenient grab-and-go breakfast! You can also roll it into balls.

  • Can of Organic Pumpkin Puree
  • 3 Tbsp Dry Roasted Nut Butter (I love Trader Joe's Valencia Peanut Butter)
  • 1/4 Cup Almond Flour
  • 2 Tbsp Monk Fruit
  • 1/2 Tsp Cinnamon
  • 1/2 cup Coconut Flour
  • 2 Scoops Collagen (I use Livingood Daily Vanilla or Pumpkin Spice)
  • 1 Tbsp Pumpkin Spice (Frontier Coop's is SO GOOD!)
  • 1 Tbsp Milk (I use Trader Joe's Organic Almond)
  • Chocolate Chips According to Your Heart (Lily's or Bake Believe from Costco)

Mix everything but the pumpkin puree. Add the puree in until you get the consistency you'd like. I probably use 1/4 - 1/2 cup of the chocolate chips. You can also add pecans or walnuts. The more pumpkin, the more immune and mood boosting benefits you'll get! I use almost the entire can, giving what's left to the cats. It's super good for their digestion too!

Creamy Chicken Tortilla Soup

My son's favorite! You'll come back this family-friendly meal over and over.

  • 2 Chicken Breasts
  • 1/4 Cup Taco Seasoning
  • 4 Oz Diced Green Chiles
  • 2 Cans Black Beans (drained/rinsed)
  • 14.5 Oz Can Diced Tomatoes
  • 4 Cups Chicken Broth (Organic/Free Range, I like Trader Joe's.)
  • 2 Cups Cheese (Trader Joe's Organic Pepper Jack Cheese is to die for)
  • 1 Cup Heavy Cream


  1. Place chicken breasts in the bottom of your slow cooker pot.
  2. Sprinkle taco seasoning over the breasts.
  3. Spread the green chiles, black beans, and tomatoes over the chicken.
  4. Slowly pour in the broth.
  5. Cook on medium for 3-4 hours (or low for 6-8).
  6. Remove and shred the chicken.
  7. Return the chicken and add the shredded cheese and heavy cream.
  8. Cook 30 minutes to an hour, stirring occasionally.

Pumpkin Pecan Cobbler

I could put this on everything! Seriously, grab some Siete chips or Simple Mills Almond Flour crackers, organic lunch meat, uncured pepperoni and lay out the picnic blanket. 

  • 15 Oz Can of Black Beans (save liquid)
  • 1-2 Cloves of Garlic Minced
  • 2-4 Tbsp Olive or Avocado Oil
  • 2 Tbsp Tahini
  • 2 Tbsp Lime Juice
  • 1 Tsp Cumin (Check out Frontier Co-op for amazing spices)
  • 1/2 Tsp Ground Coriander
  • 1/2 Tsp Real Salt or Sea Salt
  • Tabasco to Taste (I use three to four splashes)

  1. Blend liquids with 2 Tbsp of the black bean juices on low for one minute until smooth and frothy.
  2. Add the black beans and blend on high for one minute, scrape the sides, add more oil if needed for consistency, and blend until smooth and creamy.

(I store in wide-mouth mason jars for easy transportation and up to two-weeks of dipping!)

Pumpkin Pecan Cobbler

Sweet tooth driving you crazy? You don't want to miss this pumpkin pie meets sweet potato casserole breakfast/treat option.


Crust


  • 1/2 Cup Almond Flour
  • 1/2 Cup Coconut Flour
  • 1 Stick Melted Butter
  • 1 Cup Chopped Pecans
  • 1 Tsp Almond Extract

Filling 

  • 1 Can Pumpkin
  • 1/2 Cup Heavy Cream
  • 2 Eggs
  • 2/3 Cup Monk Fruit
  • 2 1/2 Tsp Pumpkin Spice
  • 1/4 Tsp Salt
  • 2 Tsp Vanilla

  1. Preheat oven to 350. Melt Butter.
  2. Add crust ingredients to the butter and mix well.
  3. Spray 8 × 8 pan and press crust mixture into bottom. Set aside 1 cup for tipping. Bake for 10 minutes and let cool.
  4. In medium bowl, combine filling ingredients and beat for approx. 1 minute.
  5. Pour over cooled cobbler crust.
  6. Sprinkle with rest of crust mix.
  7. Bake for 45 minutes.
